Where to start on modifying .xex

For example i want Halo 3 Beta without all the mods unlockers have today, i wan't to make it as original as possible and to my liking, so what tools do i need and where do i start on making .xex modifications? 

 

And how do people change how a main menu looks using a modified xex? surely  you would need to change the .map?

 

I also have Halo 2 alphas with pretty much every menu except for "xbox live" locked and you can only play with 2 controllers which is highly frustrating so being able to edit them myself would fix that issue.

All of/most of the extra stuff applied to the unlocks are pretty optional to make use of.

 

Most of the mainmenu stuff is controlled in the .map, but actual functionality is handled by the executable. Like what menu options to show and how many and whether they are disabled or not. For example the Reach Beta needed code written in order to expose all the menu options as there are normally only 3 slots in the activities lobby.

 

In the Halo 2 Beta stuffs it seems the functionality for the menus are not even present/switchable. Kornman was apparently able to switch the XBL lobby with system link but doesn't remember what he did and I'm not as good at reading x86 as I am PPC.
